The word Poke, which means "cut into cubes" in the Hawaiian language, indicates the characteristic aspect of this culinary preparation. It is a dish of marinated raw fish, diced and served with rice and vegetables. Initially considered a poor dish of Hawaiian cuisine, Poke quickly became a fashionable dish due to its freshness, lightness and versatility.
The philosophy behind Poke is to use fresh, high-quality ingredients that are minimally processed to preserve their natural flavors and aromas. The raw fish, which is the main element of this dish, must be of excellent quality and possibly sustainably caught. The vegetables used are also carefully selected and must be in season.
